Apple Betty

“ It can also be served with a scoop of vanilla ice cream to complement.”

Makes a 9” square pan or equivalent Corning Ware type casserole dish.

Filling Ingredients:

4-5 Medium-sized apples, peeled, cored and sliced

1/2 Cup brown sugar, packed

1/4 Cup orange juice

1 Teaspoon ground cinnamon

2 Teaspoons of flour

Topping Ingredients:

¾ Cup oats

½ Cup flour

½ Cup packed brown sugar

½ Cup soft butter or margarine

Recipe Instructions

1. Mix filling ingredients together well and place into baking dish.

2. Rub the topping ingredients together to resemble coarse crumbs.

3. Sprinkle over the fruit mixture.

4. Bake on the lower rack in the oven at 350? for about 35-40 minutes, or until topping is golden and fruit filling bubbly.

5. Cool slightly and serve.

For a diabetic friendly version of this recipe, replace the sugar in the topping and filling with Splenda.

As an added variation, you can add a small handful (about 1/3 cup) of raspberries, blueberries, cranberries or raisins to change your crumble dessert. It can also be served with a scoop of vanilla ice cream to complement.
