Morning glory muffins

“ It’s a really healthy muffin, not too much sugar or fat, and it freezes well!”

2 cups (230 g) flour

3 eggs

3/4 cup (190 ml) oil

2 cups (500 ml) grated carrot

1/2 cup (125 ml) raisins

1 large peeled grated apple

2 tsp (10 ml) baking soda

2 tsp (10 ml) cinnamon and salt

2 tsp (10 ml) vanilla

1/2 cup (40 g) walnuts

1/2 cup (38 g) coconut

1/2 cup (125 ml) maple syrup

Preparation: 25 minutes

Cooking time: 20 to 25 minutes

Makes: 16 muffins

Recipe Instructions:

1. Mix the flour, baking soda, cinnamon, salt and put it to one side.

2. Mix the eggs, oil, vanilla and maple syrup. Add this mixture to the first one and beat until you get an even batter.

3. Add the carrots, raisins, coconut, walnuts and grated apple.

4. Pour into muffin tray.

5. Bake in the oven at 180ºC (350ºF) for 20 to 25 minutes.
